If you’ve got corn, you may need to try this recipe for corn butter farro.

I loved her other farro recipe, so this one is enticing! I have to go buy corn, though. This one probably isn’t as healthy, having the butter, but butter and corn together, yum.

I loved eating at Legal Crossing in Boston. It was Legal Seafood's experimental kitchen. They had this great yellow gazpacho with a crabmeat tower on it. Fantastic stuff. This looks very similar and is Legal Seafood's recipe. Got the yellow tomatoes today.

Just got some farro the other day, and its corn season. This will be up this week.

That looks fantastic. I love gazpacho. I'm actually having "regular" (red) gazpacho for dinner tonight.

Sticking with the local in season produce theme, this salad was absolutely delicious! You could definitely sub in watermelon for the cantaloupe if you prefer. Our cantaloupes are the best I have ever tasted this year and are HUGE so this has been the perfect way to use them!
Today I had it for lunch on its own but during the week we had it for dinner with some shrimp done with garlic, smoked paprika and honey and it was delightful!

Cantaloupe Cucumber and Feta Salad

Servings 4

Ingredients
2 cups cantaloupe melon, skin removed + cut into chunks (or spooned into balls)
2 cups cucumber, chopped into half-moons
1/2 cup feta cheese, crumbled
Approx. 15 large fresh mint leaves, torn or chopped
2 Tbsp olive oil
1 lime, juice only
Salt + pepper, to taste

Instructions
Prep all ingredients and add to a large serving bowl. Toss everything together well, adjusting seasonings as desired.
Serve immediately, or chill for 30 minutes before serving!
