This thread made me laugh. I’ve been making fermented vegetables using whey - that I got from straining yogurt I made in the instant pot. (And I’m pressing the yogurt into a sort of cheese called Labneh - it’s pretty yummy when you add stuff to it.

I love labneh. I haven't had any since I was in Abu Dhabi many years ago.
