I made a big pot of beef barley soup last weekend. It was delicious but it didn’t use up much of the package of pearled barley I bought to make it.

Any barley recipes you can share?

I make a lentil soup using barley. Very hearty. You can pretty much use any recipe you like for lentil soup and throw a little barley in, say 1/3 cup. (Not too much...barley can absorb a lot of liquid.)
