Good thoughts, please.
Searing in a hot pan, or roasting, is also a tasty way to do them.

Parmesan and a squeeze of lemon juice is a standard at Chez Nina. Blue cheese crumbles sound delish.

Just catching up. Scrolled though the cerebral drama.
Glad Jeff is OK. That was scary. Veggies forever..

Computer broke. Got Best Buy to bring a near generic laptop out to my truck this morning.

So Steve....what if we tap into WTF's collective cooking expertise and start a "Recipes for Jeff" thread with our favorites for healthy dishes?

Maybe you could kick it off with a list of his current favorite foods. And maybe the things he doesn't like so we avoid those ingredients...

Yes

That’s a great idea!

Meanwhile, Jeff is home, specifically our home. They’re all staying with us, including the dog and two fat Guinea pigs.

Jeff is fatigued, his neck hurts, he’s sensitive to light and he can’t go back to work for two weeks. He’s going to need some care and being as I’m retired I can easily do that.

Official diagnosis is now a stroke, which is not a comfort. There are more tests scheduled for later this week if we can get there. I put gas in the truck just in case.

Grandson Jack is a joy to have around, which is good because daycare is likely to be shut down because of the storm. A very tractable and easygoing kid - remarkable for a two year old. Yes, I can change a diaper when called upon to do so. I’ve done it before.

This is why we moved to Ohio - it sure as hell wasn’t the weather.

I’m glad we’re here.

sorry to hear all that! Just saw it.

38 isn't an abnormal age for HT if the diet isn't optimal.

I'm so glad you're there and able to help.

Is everybody at your house (and thereabouts) fully recovered from COVID?

Your family has really been through it. We're sending warm thoughts from Oklahoma.

You guys have certainly had more than your fair share of challenges. Moving cross-country is a big enough change, but then on top of it COVID and now this.

You've got a lot on your plate right now, but winter can really be a magical time of year. I find it to be a season for rest and renewal. The cold and snow force you to slow down.

You've got each other to lean on; that's such a wonderful thing. Hopefully now the whole family can take a collective breath and recover from everything that's been going on.

Hang in there.

Comfort

I’m so glad you are there to help! I’m so sorry about the stroke - that’s scary. Changing a diet is really hard (I know this, I’m trying to change mine).

Good to hear things are off in the right direction.

As for veggies, there's some good veggie burgers out there these days - some of which are actually made from veggies!

Great timing for the move, Steve.

And on the veggie front, I've been obsessed with roasting veggies in my air fryer. (Air fryer is actually optional). My latest are roasted carrots--just peel, chop into maybe 3 inch pieces, toss with olive oil, salt, pepper and garlic powder. Yum!

If you're turning into a real midwesterner, you might also enjoy my midwestern parents' fave carrot prep, toss in oil and dust with cinnamon (no sugar).
