I see upstate NY has something called a “trash plate”. Doesn’t look good but could be delicious!

I grew up in Buffalo, and the local signature sandwich was "beef on weck" -- sliced roast beef on a crunchy/salty kummelweck roll, with horseradish. I remember it being pretty darn good, and a few restaurants specialized in it.

Indian tacos are a big thing here in Oklahoma and they're delicious.

New Orleans has a cottage industry of specialty foods, and I try to eat them all when I visit. This is hard to do.

Po-boys. ThumbsUp I like the fried oyster variety. Gumbo, beignets, crawfish etouffee, etc., etc.

You can get a lot of these things, or reasonable facsimiles thereof, in my hometown a hundred miles away. Fried catfish is also a big thing in that part of the world, and they know how to cook it so that the crust is light and thin. Ditto okra. When I get fried food elsewhere, it is so greasy and doughy.

Don't know if this is a regional specialty, but it sounded awfully tasty.

Grilled Blue Cheese, Pear, and Caramelized Onion Sandwich

I've had some of the Carr Valley blue cheeses and liked them a lot.
