Made this last night. Delicious with crusty rolls for the sauce, pretty healthy. Strawberries in balsamic vinegar for a very healthy dessert.

I recently made the same recipe chicken and shallots. It’s delicious. The whole picky family liked it. I think next time I will coarsest chop the shallots though. The whole ones seemed to just lie there instead of playing nicely with the other ingredients. The cherry tomatoes set it off and the fresh tarragon is definitely worth the investment.
