I made a giant pot of bean soup using a dried mix. “Hurst” 15 bean soup. Very tasty. I paid about $3 for the package and it made enough soup to easily feed four, maybe more. Dinner for four for $3 has to be one of the best deals going. This got me thinking. If you found yourself strapped for cash, what meals might you make to feed your family?

I haven’t used a dried mix but I do make bean soup pretty often. A favorite is lentil / barley / mushroom. Or escarole and white bean. I tend to cook from scratch but haven’t kept track of cost. Food is getting expensive, even more so if you buy organic.

I saw a 15 lb. pork loin roast for $18 yesterday. That’s absurdly cheap. Cheaper than chicken, much cheaper than beef. Calories per ounce even lower than chicken breast which seems hard to believe. I’m wondering if I should start using it for dog food. Or maybe slicing it up for chops. It’s a long skinny roast and I’ll bet I can get 15 nice thick chops out of it. That’s 7 dinners for two for $18. That’s hard to beat.

I do a lot of bargain shopping like you. If butter is on deep sale I’ll buy 10 lbs and freeze it. Pork too, since I love its versatility. I’ll even buy and freeze half gallons of milk. Really helps keep the grocery bill down.
