Nature synthesizes starch from carbon dioxide and water, sure. Corn plants do that, for example. Now a team of scientists from China claim they have found a way to synthesize starch in a way that is even more efficient than corn plants. They claim 8.5x higher efficiency compared to corn, and that their process will use a lot less space compared to farming corn.

Not doing it with plants means less demand on land and water and less pesticides, lots of upside from this perspective.
