The older version works just fine as a basic souz-vide machine using the keep warm setting and custom temperature setting.

Neither will mix the water...

Thanks! I didn't know that. I always turn off the keep warm when I cook something in the Instant Pot; we just plate up the finished food and eat, and if seconds are a bit cooler that's OK.

If I decide to experiment with sous vide, I'll try your method.
