Re the cranberry recipe, it occurs to me that I ought to be able to substitute erythritol for sugar (!!!)

Amazon carries several brands, including Lakanto's monk fruit (so-called, but really mostly erythritol - FWIW the only sugar alcohol that is NOT absorbed in the intestine). I love it, somehow preferring the "gold" flavor. To me it tastes just like sugar, and can be used in cooking.

It might work better in a powdered texture in this sauce, but as long as the Lakanto granular kind dissolves it ought to work well.

I checked the net carbs in cranberries themselves, and see there are about 10 per - raw - cup (subtracting the fiber). This is not perfect, but it would be a LOT better than having to forego it altogether. (No, Bourbon is not calorie-free but has NO carbs - the critical factor for keto-eaters.)

Just a word to the wise, for those suffering from Keto. I have found I need to really be careful about counting carbs. (The erythritol comes in an inexpensive sample size from Amazon. At this point, I order it at least three lbs at a time - so do sons.)
