Use castelvetrano olives - they cook down very buttery and good. Tonight I'm using boneless chicken thighs.

I think you posted about this recipe next door a while back and I've made it a couple of times since then. It's excellent.

If possible, best to use lemons that don't have too much white pith. I haven't tried them, but I think the Meyer lemons would be awesome.

Hey Steve, did the creatures leave you any Meyer lemons?

I have made a very similar recipe. I usually use Graber olives for the same reason. Very buttery. And everything goes better with Meyer lemons.

Mik was the one who introduced me to Meyer lemons, BTW! ThumbsUp

Yeah, I have made this for years but it is worth repeating. And I had some wonderful Meyer lemons. Consuming it as I write.
