I don't use a lot of Sriracha sauce, but I do like it on some foods. I first encountered the sauce in a local oriental restaurant.

In a pinch, I'll use Frank's Red Hot Sauce, which I also use sometimes.

As shortages go, it's a lot less worrying than the toilet paper shortage at the beginning of the pandemic.

At least some people are probably rejoicing. I recall hearing a story about the people who lived near the plant in California that makes Sriracha sauce and how they were afflicted by fumes from the plant.

I'm relatively unaffected. There must be something very special about Sriracha to make it so popular...and they do use a particular pepper variety. But around here there are about 100 different hot sauces for sale, so local taste buds should not suffer too badly.

The last thing I read said they installed scrubbers on the exhaust stacks and solved the problem.

Factoid from Wiki: Sriracha was originally made with Serrano chiles. They switched to red jalapeños at some point to make it less pungent.

When I’m looking to buy peppers I’ll choose serranos over jalapeños because some jalapeños have been bred not to be hot, and you can’t tell just by looking at them.

I'm not a huge sriracha fan, either. I'll take it in a pinch. If I want liquid heat (as opposed to salsa or just chopping a chile pepper into stuff) I'll usually drift toward Victoria or even (gasp) El Tapatio.
