wtgHow could I have forgotten?
We love meat loaf, but for some reason I haven't made it in ages. Until today. Lunch was meat loaf, mashed potatoes, and steamed broccoli. Big yum.
My starting point is this recipe, which I originally found in the Silver Palate cookbook
The New Basics . I change it up a little, depending on what ingredients I have around the house.

I sauteed some diced red onion, carrots, and poblano pepper, and threw in some panko bread crumbs, egg, ketchup, and a splash of half and half. Salt and pepper. Mix well and form into an oblong loaf and bake in an open Pyrex dish.
Will bake bread tomorrow morning so we can have meat loaf sandwiches for lunch.
Did I mention that we love meat loaf?

MikhailohWhat's not to love? I usually make it with Lipton Onion-Mushroom soup mix and mushroom gravy.

AdagioMWe love meatloaf, too, but haven’t had it in ages. Mr. AM is in charge of making it. We’d have to have it on the weekend, because Mr. AM is a weekday pescatarian. I’m sure I can talk him into making some soon! Thanks for the reminder.
