Most of those hot sauce packs are pretty terrible. Lots of vinegar and carrot, heat added artificially with capsaicin rather than with lots of the flavourful chilies. We went through a phase of visiting a hot sauce store where you could taste sauces before you buy. Good thing, too, because they were ridiculously prices. But we figured out what we like and don’t like and now buy less expensive sauces that have the same qualities.

We used to go to a Greek place that had a hot sauce bar. I’ll bet they had 30 different bottles. It eas fun! We’d always try a few different kinds.

The wall of hot sauce at Heaven on Seven, a now-shuttered Cajun-Creole restaurant in downtown Chicago. It was located on the seventh floor of an office building. Unless you knew it was there, you'd never find it. Great food. Used to go there all the time for lunch. Story about the restaurant when it closed earlier this year. https://abc7chicago.com/heaven...restaurant/11681427/ I wasn't into hot sauce back then, so I never tried their offerings. The food was spicy enough for me just by itself.

Your restaurant picture reminded me that there was a hot-sauce store in New York, just as it was becoming the next big thing. A little storefront in the Village or Soho. It didn’t last long; maybe it was a bit ahead of its time. Or they raised the rent.

That place looks fantastic! Too bad it closed. I see th here is a hot sauce shop in the farmers market. I’ll have to check it out.
