Great contest, and as usual I'm late to the party but still wanted to share a recipe for a quick pickle to go with all the great quick entrees:
Peel one cucumber, slice in half lengthwise, scoop out seeds, and slice cuke thinly in half-moons.
Slice 3 radishes thinly.
Toss cukes and radishes in a bowl with a sprinkle of salt and black pepper, 1/4 teaspoon of sugar, and 2-3 tablespoons vinegar (I use the Trader Joe's white Modena vinegar, but any kind of white vinegar will do).
Ready to eat in 5 to 10 minutes.
You can also add some fresh herbs like dill or chives if you have some available.

It’s White Chili with Chicken and Beans. I went back and edited it into the post to make it easier, as well as made a live link. My friend Sue’s site has tons of fabulous recipes on it.
