That cauliflower one looks intriguing. My daughter has a recipe for alfredo sauce that is 90% cauliflower, no cream. (It does have parm cheese, though, so not for lactose-intolerant.) It's surprisingly good, as in lick the plate good.

I like chickpeas, though. I might be tempted to try that but also include chickpeas.
