We moved here in November and and Thanksgiving turkeys were on sale. We bought one. As part of the welcome back Jeff celebration we made it tonight with a southwest twist. Mediterranean diet can wait.

The turkey was outstanding - the standard Ina Garten recipe rubbed with southwest spices. It made the most excellent gravy. Roasted carrots with cumin were terrific! But the star of the show was this southwest cornbread stuffing from Epicurious. It would be easy enough to make it vegan - mess with the cornbread recipe and sauté the chilis in olive oil. I recommend toasting the cornbread first.

I’ve never had anything like it. It’s a meal by itself.
