I think I posted about these before - I made this one tonight. The hardest part was preparing the Brussels sprouts (the most wasteful vegetable on the planet). But is was really good. Even the super crispy lemon slices. I added a few more herbs besides the parsley, and probably more olive oil - and I also did up some baby potatoes in the mix.

Trader Joe's has Brussels sprout stalks this time of year....they're a steal and are usually very fresh.....

We have a recipe book by Ricardo called Sheet Pan Everything and the recipes we have tried have been great! The Paella is delightful (and so easy!)
