Hey Steve! Chili Crisp Eggs
I bought chili crisp on your recommendation and we made this tonight for dinner. Steve saw the recipe yesterday in the NYT, but I found it on another website below (that everyone can see). Delicious! I steamed up some broccoli and threw that on top. Didn’t have the furikake (but just ordered some) so I used a little Japanese soy sauce. We cooked 4 eggs, so Steve used 2 T of the stuff - I thought we were going to die, and you have to make sure you turn your exhaust fan on - but it was not too hot. It makes the bottoms of the eggs all nice and crispy-yummy. We ate it on a bed of rice.

That looks terrific and just in time. For Christmas, Kim gave me a gift set of three chili crisp blends, a jar of powdered Mala spices and a bottle of chili oil with wine. I’ve been experimenting with the various formulations and find most are just too oily. Using them to fry eggs sounds perfect!

Made it this morning and it was delicious!

It would have been prettier if I had cooked the egg sunny side up - maybe next time. It was very rich and I think it might be best as an egg sandwich with tomato and lettuce.

I didn't get the oil hot enough to smoke. Probably would have been crisper if I had.

Steve cooked it in a cast iron pan - and the bottom was coated with chili crisp - he did them sunny side up - they were so pretty - and I think that and the hot cast iron are why they got crispy. We will do this again as a dinner dish (on calrose rice cooked in the rice cooker).

We had some leftover basmati rice from tikka masala that I made early in the week. I microwaved it the next day, using the ice cube method to get it just like it was just cooked. Blopped some chili crisp on it, nothing else. Outstanding!

OK, that looks great. Now I've gotta find out how to get a good chili crisp.

I think that those chili crisp fried eggs would go over sautéed riced cauliflower very nicely!

I couldn’t believe I found it here - might have been at Walmart! Think it’s become an “in” condiment.

Yes, it’s the latest thing!

From what I read, Go Gan Ma brand is the most popular worldwide. Widely available here -including WalMart and Amazon.

Lo Gan Ma is fine but not nearly as good as the (sadly far more spendy and far harder to find) Momofuku. I might have to make my own.
