so I'm proud of myself and these need their own thread. I've never made candy with chocolate before besides "candy melts" which don't count since they're mostly flavored wax. Today in class I tempered a huge amount of chocolate and my first task were bonbons, I used a mold, orange flavored ganache (kind of, it's what Chef called it but not equal parts), and colored cocoa butter plus a little white chocolate.

Chef said they were something he "would put his name on" meaning they were the quality he would serve/sell Big Grin. Pretty good for a first try!

Alas, I'm not a fan of fruit-chocolate mixes. I prefer both in their unadulterated form. Big Grin

We also made hand rolled truffles, same thing but minus the orange and they were done by hand meaning no fancy exterior or perfect shape. But OMG yum. I'm not a fruit fan in any form Big Grin especially not with my chocolate. But I made them because I wanted to add color and Chef said it was misleading to your guest to have color and no flavor to match the color. Yeah yeah... Big Grin

I'm not sure about the brand of chocolate but we do use dark couverture chocolate, meaning there's over 31% cocoa butter so it has a more fluid consistency when melted so it's easy to do confectionery work.

Chef said if I wanted more practice that I could do free labor and work in L'Ecole, the restaurant at the school. It's one of our last classes at the school, the bake shop is in the morning so he said I could come in any day 7am-2pm and play with chocolate that I don't have to buy Big Grin. but I don't get to take much of it home either hehe
