A company called Compass Box tried something like this, but it wasn’t customizing for the customer. They took scotch whisky but in addition to barrel-aging it, they tossed extra barrel staves into the liquor to impart more wood character.

This got them into big trouble with the authorities in Scotland, who find this a kind of cheating. But Compass Box is still around, and doing well, so I guess they worked something out with the authorities. Maybe they had to change their labeling.
